FOODOGRPAHY: Coconutnut is a giant nut - the coco ice cream experiment

Coconut, coconut, coconut, a wonder living thing that yields food, dwelling and sweet water. When a friend delectably described coconut ice cream, curious George got the better of me.

A wonderful surprise that the recipe only called for four basic ingredients. And as the adage goes, try and try until you die (not really, until you succeed). The first attempt was the learning curve. Off to the store to buy four shells of coconuts. Had the store break them open and scrape the meat. At home, extracted the milk from the coconut flakes (an exercise of putting water on them and then squeezing off the liquid).

Side story: I have fond memories of coconut milk. My grandmother had long, black hair and the only thing that touched her hair was coconut milk. She would laboriously go through the process of extracting the coconut milk and when she bathed, she would pour the milk on her hair and let is stay until she is done with her bathing chores (which often included doing her laundry which she entrusted to no one but herself). Her long hair stayed long, shiny and healthy until her old age.

Back to the maiden attempt, the result with milk from fresh coconut did not turn out as expected. There must be a right mix of water and flakes to get the right consistency of a creamy milk. That will be for future experiments. To the rescue, canned coconut milk. While the ultimate goal is to use only the freshest ingredients, this one will do for now since this is an experimental attempt.

The second try worked!. The result was a refreshing concoction which was wiped clean by the kiddies (my nieces and nephews), my guinea pigs for my kitchen creations. This one is worth a repeat then.

Life musings:  Life is not always black and white. Not all first attempts lead to success. One learns from the lessons of earlier tries and make another go. Success may happen  but it is the wonders of lessons learned that add spice to life.

FOODOGRPAHY: Puto maya & sikwate

Concocting puto maya while watching Olympic 2012 opening.

Puto maya is a Filipino dish made from sticky rice boiled in coconut milk.

Sikwate is chocolate drink. This one is brewed from organic coco discs. Chocolate are made from cacao seeds.

In the Philippines, puto maya and sikwate are paired with ripe mangoes.

Together, this is an ideal breakfast or snack fare for Filipinos.

Life musings: One can amass wealth and material possessions for personal satisfaction but some pleasures in life do not cost much but bring so much contentment. Such is the case of puto maya & sikwate.

FOODOGRAPHY: Champorado Atbp. - Comfort Food

I woke up before 6:00 AM this morning. Nothing unusual except that it is a Sunday and Sundays are supposed to be sleep ins. I was jolted to be more awake when the thought of champorado entered my mind.

A scoop of jasmine rice here, a disc of tablea there, a touch of choco milk for added taste. Simmer in the pot. Stir, stir, stir and kazing! - champorado with the right stickeness of the broth.

But by itself it is lonely and I know that I don't have any dried fish on stock. So raid the ref and somewhere behind the bottles and containers is a half consumed pack of tapa -those  flat, sticky, sweet and spicy sheets of cured meat. Cut into strips with kitchen shears, let them serve time in the pan and wallah! - the alternative to 'buwad'.

Champorado and tapa still need company. So eggs came a calling. With half a tray left on stock, the eggs must be consumed. Broke 2 of them into a bowl, whisked just enough, sprinkled seasonings and a dash of cheese. Scrambled egg completes the trio.

Ah, Sunday morning bliss. Comfort food early in the morning.

Life musings: Life's joys are not always complicated. It is the simple things that give warmth to the heart and hearth. The idle Sunday morning with the right combination of food. The slow repast to savor every bite and the assurance that all is well at that very moment.

FOODOGRAPHY: Mangovocado Sorbetes

The ice cream experiment started with an ice cream maker that went on sale. I chanced upon it in one of my mall wanderings. After checking that I can squeeze it on my budget, I bought one with eyes closed.

Have been dabbling with the gadget every chance I get. It can be a production number though since the machine requires bags of ice chunks to get going. But the thought of experimenting with flavors and tastes is too exciting sometimes so chuck the production number.

The latest flavor experiment is a combination of the fruits in season, mango and avocado in this case. What ifs reeled on my mind. What if I combine the two? What if I add a touch of yellow food color? The what ifs got me excited.

The mangovocado flavor resulted to a strong mango flavor but with a hint of tang from the avocado. It is a different taste. The consistency of this ice cream batch is much better than my earlier attempt.

Life musings: Just like in life, by ourselves, we are our own unique flavor,  but if we blend with other people and share our persons to them, we come up with exciting flavors.
