I woke up before 6:00 AM this morning. Nothing unusual except that it is a Sunday and Sundays are supposed to be sleep ins. I was jolted to be more awake when the thought of champorado entered my mind.
A scoop of jasmine rice here, a disc of tablea there, a touch of choco milk for added taste. Simmer in the pot. Stir, stir, stir and kazing! - champorado with the right stickeness of the broth.
But by itself it is lonely and I know that I don't have any dried fish on stock. So raid the ref and somewhere behind the bottles and containers is a half consumed pack of tapa -those flat, sticky, sweet and spicy sheets of cured meat. Cut into strips with kitchen shears, let them serve time in the pan and wallah! - the alternative to 'buwad'.
Champorado and tapa still need company. So eggs came a calling. With half a tray left on stock, the eggs must be consumed. Broke 2 of them into a bowl, whisked just enough, sprinkled seasonings and a dash of cheese. Scrambled egg completes the trio.
Ah, Sunday morning bliss. Comfort food early in the morning.
