FOODOGRAPHY: Pistachio Banana Bread

 
 
 
What to do when there are too many ripe bananas? Make banana loaf.
 
Banana loaf is easy to make and the result is a delectable snack fare that is good to eat when hot but still good enough to chew on even if cold. It also goes well with hot coffee.
 
 
Ingredients:
 
 
2 cups all purpose flour
1 tsp baking soda
a pinch of salt
1/2 cup butter
1/2 cup brown sugar
2 eggs beaten
2 cups mashed bananas
1 cup ground pistachio nuts
 
Process:
 
1. Combine flour, baking soda and salt
2. In a separate bowl, cream butter and sugar. Add in eggs and mashed bananas.
3. Add in 3/4 cups pistachio nuts
4. Stir in banana mixture into flour mix.
5. Pour into greased pan.
6. Top batter with the remainder of the nuts
7. Bake in pre-heated oven (175 degrees) for about an hour.
 
Life musings:
 
It is not so much what life gives you but what you make out of what life gives you. Bananas as they ripe may end up thrown and no longer edible. But if they are mixed with other ingredients before they go totally over ripe, they end up yummier and more filling. Just like in life, circumstances by themselves may not always be pleasant but shifting perspectives and changing tactics may just turn circumstances into pleasant surprises.
