FOODOGRAPHY: Biko (sweetened glutinous rice)


Good Fridays in the Philippines carry with it food traditions. There are certain dishes that are typically served on this day. Among these are binignit (ginataan) and biko. Binignit is a sweet concoction typically made up of bananas, camote (sweet potato), gabi (yam), sago cooked in coconut milk.
For this Good Friday though, I decided to give biko a try. This is a sticky rice dish cooked in latik (thickened coco milk and sugar). It is very easy to make but may take some time as thickened coconut milk takes time to reduce.
Ingredients:
2 cups malagkit (sticky rice)
1 1/4 cups water
4 cups coconut milk
2 cups brown sugar
1/2 tsp salt
Procedure:
1. Cook rice in water
2. In another pan, combine cocnut milk, brown sugar and salt and cook until texture 
    becomes thick . Stir.
3. Combined cooked rice and thickened coco milk and sugar mixture (latik) . Stir constantly
    until all the liquid evaporates.
4. Transfer the  biko to a pan (banana leaves may be used to line the pan).
5. If desired, the biko may be topped with latik.
Life musing:
Perfect concoction takes time to achieve. It requires patience and constant stirring. And the end product is sweet and delightful.
Certain delights in life require patience and constant tries until the perfect concoction is achieved.
