FOODOGRAPHY: Tocino del cielo


It is interesting that this sinful dessert is translated as 'heaven's little pig' in English. Another translation is 'bacon from heaven'. The heaven part is easy to understand as this sweet dish is heavenly to the sweet tooth. However, reference to the pig is quite hazy. Especially since the main ingredient, egg, comes from chicken.
 
This concoction has only 4 ingredients - egg yolks, water, butter and sugar. Of Spanish origin, it traces its beginnings  back to the time when there was over supply of yolks after the whites were used to  bind blocks of limestones for churches and buildings. The volume of yolks must have been mind boggling.
 
To put to better use the left over yolks, they were mixed with water and sugar to make this oh-so-heavenly dessert.
 
The version I made turned out to be very smooth and in lovely yellow color. It was so pretty to look at that it took sometime before the heart shaped version was finally sliced into smaller pieces. Nonetheless, the taste was better than the look and for a sweet tooth like me, it lived up to its 'heavenly' claim.
 
Ingredients:
 
1/2 cup sugar for caramel
1 1/2 cup sugar
1 1/2 cup water
1 cup butter
10 egg yolks.
 
Caramelize 1/2 cup sugar. Line the pans with the caramel.
In a saucepan, combine sugar and water and let boil. Add the butter and mix until melted.
In a separate bowl, beat egg yolks. Slowly add the sugar-water mixture and mi until perfenctly blended.
Pour the mixture into the pans.
Bake in medium heat.
 
Life musing: A beautiful heart must sometimes be broken so that it's true worth will be realized. Yet broken hearts heal and the memory of the intact beautiful heart remain. And the heart only becomes stronger and more beautiful.
